Biography

Dr. Ong is the Associate Professor of the Department of Chemical and Environmental Engineering at the University of Nottingham Malaysia Campus. She received her bachelor degree in Chemical Engineering (BEng Hons) from the Universiti Teknologi Malaysia (UTM) in year 2005 and later worked as a technical support engineer in the gas industry before pursuing her PhD in Chemical Engineering from the University of Nottingham in year 2011. Currently, she also serves as the Vice-chair of Faculty Research Operating Group. Her research areas are mainly in industry drying, food microstructure, processing of phytochemicals and edible antioxidants, product development, process optimization and simulation.

Current Research

Current main research interest is to develop new food products (from raw farm materials ranging from fruits and vegetables to herbs) for health benefits and food diversification. She is also keen in developing sustainable and green drying and food processing technologies in preserving foods as naturally as possible without compromising the delicacy and nutrition. In addition, her research areas also encompass the natural phytochemicals and antioxidants processing as well as sensory evaluation, microstructure assessment and predictive modelling development.
