Vehicles of contamination

Bacteria cannot travel very far independently. However, “Vehicles of contamination” allow them to spread easily.

Such vehicles include: people, animals, kitchen equipment, food contact surfaces and utensils.

Remember that some biological agents, such as viruses and fungal spores can also be airborne.

The chain of contamination can be stopped by:

  • Protection, such as washing hands, tying up hair and covering food from animal contact
  • Prevention, such as sieving or washing food to prevent chemical contamination, and the cleaning work surfaces
  • Destruction, such as proper cooking of food to kill bacteria.
