Menus of Change principles_JUN23

  • Menus of Change (MoC) is an initiative launched in 2012 by The Culinary Institute of America (CIA) and Harvard T.H. Chan School of Public Health.
  • It consists of 24 principles that focuses on health and nutrition, sustainability, and social responsibility.
  • The principles are broken down into two sections:
    • Menu concepts and general operations
    • Food and ingredients
  • We have started to incorporate these principles into our catered accomodation.
