Tim is a member of the Future Food leadership team. A PhD in polysaccharide physical chemistry led to Tim joining Unilever looking at the mobility of polymers in the plant cell wall, the processing effects on the gelation of single and mixed hydrocolloid systems, and how flavour and bioactives are best delivered during consumption and digestion of food. In 2007 he joined the University of Nottingham where he has been the Director of the EPSRC Centre for Innovative Manufacturing in Food and Head of Division for Food Sciences. He also helps lead the Institute for Advanced Manufacturing.
