Dr Tristan Dew

Tristan is an Assistant Professor in the Future Food Beacon, and leads the Molecular Phenomics research group. His research focuses on developing new methods in targeted and untargeted mass spectrometry to improve decision making across the food chain. He has published a number of papers addressing the profile of plant secondary metabolites in foods, assessing the bioavailability and metabolic fate of these compounds via human intervention studies. He has applied his analytical expertise to solve a diverse range of problems in the areas of plant science, clinical dermatology, functional foods and human nutrition. His current projects include establishing biomarkers of diet, the fine quantitation of plant hormones, and investigating how processing changes the chemical profile and eating quality of polyphenol rich commodities, such as chocolate and coffee.
