As Course Manager (Master of Nutrition and MSc in Advanced Dietetic Practice ) I am a member of both Undergraduate and Postgraduate Teaching and Learning Committees, playing an active role in developing the School's Teaching and Learning Strategy and monitoring teaching quality in addition to innovating new learnrng opportunities.
Dr. McCullough has been a State Registered Dietitian since 1995, having worked in a number of clinical and community posts within the UK. Current areas of research interest: Nutritional status of children Comparison of primary school children in Korea and the UK, the effect of breakfast on the nutritional status and academic performance of children. Vitamin A and carotenoids status The nutritional status of mothers and infants in lesser-developed countries, the effect of vitamin A supplementation on gut integrity and haematological status, the bioavailability of carotenoids from spinach supplemented snacks. Nutritional status in Type 2 diabetes The causation and prevention of Type 2 diabetes in various ethnic groups. The effect of dietary modification and antioxidant supplementation. HAPO (hyperglycaemia and adverse pregnancy outcomes) - the role of diet in the development of gestation diabetes (in collaboration with the University of Manchester) Functional foods The effect of probiotics drinks on health, dietary intake and well being of healthy groups within the population.
