Sarah Ellis

Assistant Professor in Human Nutrition, Faculty of Science



Sarah graduated from University of Nottingham with a Master of Nutrition (1st class) 2009 and completed her MSc in Advanced Dietetic Practice also at the University of Nottingham in 2013. Sarah was awarded her PhD in Nutritional Sciences in 2023.

Sarah has worked within the NHS as a paediatric dietitian for nearly 10 years. Sarah joined the Division of Nutritional Sciences as a Teaching Associate in 2016 having previously been a Visiting Lecturer, she was promoted to Assistant Professor in 2022. Alongside her teaching role at the University Sarah has a private practice based in Nottingham.

As part of her professional practice, Sarah has been involved in developing and delivering evidence-based training to health professionals and community workers, and has acted as a mentor to a number of dietetic students. Sarah has been a guest lecturer at Nottingham Trent University teaching undergraduates.

Expertise Summary

Sarah's dietetic expertise spans a range of subjects with her main interest now being lifespan nutrition. Whilst in the NHS, she worked within the field of paediatric dietetics, and so has experience with micronutrient deficiencies, restrictive eating in ASD/ ADHD/ ARFID, nutrition support, faltering growth, tube-feeding in children, and allergy/food hypersensitivities

Sarah looked at weight management in pregnancy for her PhD.
