Healthy eating

The research on healthy eating, aims to inform and inspire food & drink SMEs and encourage the application of the research within their business. The research will assist SMEs to discover business opportunities and challenges with healthy food production and consumption, and identify ways in which to exploit these to increase business productivity.

The research will focus on exploring why healthy eating is important and what the latest market and future trends reveal about this area of research.UK governmental policies and regulations that support and encourage business development in this field, will be investigated. The research will highlight the potential opportunities available within healthy food production that could be incorporated by SMEs. The research will consider how businesses could utilise the opportunities/potential solutions/knowledge in this field to increase their business competitiveness and further enhance their productivity. This could include exploring healthy alternative ingredients such as: plant-based proteins, edible insect, microbial based proteins. It may also involve using healthy product formulations for example: reduced sugar, fat, salt or additional fibre and micronutrients. Ultimately, the research will work to provide an overview of the latest knowledge and insights in this field with a direct application to SMEs, in order to support them meet the market demand.
