Nottingham Venues partners with the British Deer Society

As part of their ongoing commitment to sustainability, last year Nottingham Venues launched a new one-of-a-kind partnership with the British Deer Society, an organisation with a mission to promote responsible deer management in the UK.

At the centre of the collaboration is Bramleys Restaurant, located within Nottingham Venues’ 4* Orchard Hotel, which has committed to donating £1 to the British Deer Society for every venison dish sold.

Venison served at Bramleys is sourced from within a 30-mile radius where possible, helping to reduce food miles and maintain a clear link to local land and wildlife management practices. From a hospitality perspective, this initiative focuses on offering guests high-quality, locally sourced food with transparent sourcing, while supporting wider biodiversity and sustainability efforts through informed choice.

David Cartwright, Head Chef at Bramleys Restaurant, is leading the development of a venison-forward menu that highlights seasonality and quality. He said:

“Venison is a high-quality and healthy option, and my team and I have created dishes that really showcase the meat. We are committed to sustainability, seasonality, and using the best locally sourced produce.”

Tom Waldron-Lynch, CEO of Nottingham Venues, commented on the role hospitality can play in raising awareness around sustainable food choices. He said:

“Venison is a fantastic, sustainable meat. This partnership not only celebrates venison but also educates people about its role in biodiversity conservation, rewilding, and farmland protection.”

Funds raised through this partnership will directly support the British Deer Society’s work in education, training, and conservation. This initiative represents one of several approaches Nottingham Venues takes to responsible food sourcing, alongside a wider range of menu choices available to guests.
